Bilaire is a red wine with Protected Designation of Origin (PDO) Alicante, made exclusively with Monastrell, the native variety that best expresses the character of the Alicante territory.
Their vineyards grow on mineral and stony soils, an environment that fosters balanced vine development and imparts character to the fruit. The harvest takes place at the optimal moment of ripeness to preserve the fruit's intensity and the varietal's identity.
After fermentation, the wine undergoes an approximate aging period of 6 months in French oak barrels, enough time to add greater complexity and structure without detracting from the natural expression of the Monastrell.
On the nose, aromas of ripe red and black fruit stand out, accompanied by subtle spicy and toasty notes from the barrel. On the palate, it is ample, balanced, and has a pleasant texture, where ripe tannins and well-integrated oak lead to a persistent finish.
Bilaire is a versatile and gastronomic wine, ideal for pairing with grilled meats, cured meats, mountain rice dishes, traditional stews, and aged cheeses. It is recommended to serve it between 16 and 18 °C to fully enjoy its character.
