The expression of a native variety
Bilaire Blanco is made exclusively from Merseguera, a native variety from Alicante, from a vineyard planted in 1985 and cultivated in a goblet style.
The vines grow in stony, calcareous soils, conditions that favor a pronounced expression of the variety and help preserve its natural freshness. The result is a white wine that seeks to showcase the personality of Merseguera from its origin, without artifice.
The harvest is done manually, selecting the grapes at their optimal point of ripeness.
Freshness can also have depth.
After a brief cold pre-maceration, the grapes undergo gentle and prolonged pressing to extract only the best from the fruit. Fermentation takes place in French oak barrels, with all movements performed by gravity.
The wine then spends six months on its fine lees. This lees aging adds volume, texture, and complexity, while the oak integrates gradually without masking the fresh, varietal character of the Merseguera grape.

Nose: White fruit and citrus, accompanied by delicate herbaceous hints and subtle notes of vanilla and spices.
Mouth: Fresh, balanced, and enveloping, with breadth and well-integrated acidity. The texture and lees aging add depth and a clean, long, and harmonious finish.

The combination of manual harvesting, careful pressing, barrel fermentation and six months on lees seeks to demonstrate that freshness and complexity can coexist in a white wine with a clearly Mediterranean identity.
Ideal for fish, seafood, rice dishes, Mediterranean cuisine, white meats, and soft cheeses. Its freshness and texture make it especially versatile. It is recommended to serve it between 8 and 10 °C.
